Restlessly I roll myself across the mattress. Something's wrong. I try to remove myself from an Arsenal pillow, plush blankets and stuffed monkeys, then am forced to narrow my eyes to a slit – it's bright, extremely bright. I stand in front of the balcony door for five minutes, until the last penny drops with a loud "klong", which is then answered by the landlord beating her broomstick against the ceiling.

What has felt like a spotlight shining onto me between all the feathers is actually bright sunshine. What, is it Christmas already? Thank god it isn’t. No more grey days and long faces. This is where purest spring sun shines.

I don't think I can contain myself.

I can literally feel the endorphins bubbling inside of me. Wandering around the streets, cycling, running a half-marathon, finding the man of my dreams and watching the bunnies make love. Everything is possible. Life is beautiful and thats why I am going to eat ice cream. For breakfast. Because – why not. With Luicellas Eis-Mix making ice cream is practically simpler than any breakfast roll and even mom can’t complain because there are carrots in it.

Unruhig wälze ich mich quer über die Matratze. Etwas stimmt nicht. Verwirrt drehe ich den Kopf aus einem Arsenal Kissen, Plüschdecken und Stoffaffen, kneife die Augen zusammen – es ist hell, verdammt hell – und stehe geschlagene fünf Minuten vor der Balkontür, bis der Groschen mit einem lauten “Klong” fällt, der von der Untermieterin mit klopfendem Besenstiel beantwortet wird.

Was sich zwischen den Federn angefühlt hat wie ein Baustrahler, ist leuchtenster Sonnenschein. Ja, ist denn schon Weihnachten? Zum Glück nicht. Schluss mit grauen Tagen und langen Gesichtern. Hier strahlt purste Frühlingssonne.

Ich glaub, ich werd’ nicht mehr.

Ich kann förmlich fühlen, wie die Endorphine in mir blubbern. Durch die Straßen bummeln, Radfahren, einen Halb-Marathon laufen, den Mann für’s Leben finden und den Hasen beim Rammeln zusehen. Alles ist möglich. Das Leben ist schön und darum esse ich jetzt Eis. Zum Frühstück. Because – why not. Mit Luicella’s Eis-Mix schmiert sich das ohnehin schneller als jede Stulle und selbst Mutti könnte nicht meckern – sind ja schließlich Karotten drin.

Directions:

Wash the carrot, peel it and rub it finely. Chop the walnuts coarsely. Pour the Luicella's Eis-Mix mix Vanille Royal in a bowl with carrot juice, oat milk and cinnamon into a measuring cup and puree it. Freeze the liquid for 40min-60min. After half the time add the walnuts and carrots.

For the sauce: Mix oat milk, almond mousse and icing sugar, then pour over the ice cream.

Zubereitung:

Die Karotte waschen, schälen und fein reiben. Die Walnüsse grob hacken. Den Luicella’s Eis-Mix Vanille Royal mit Karottensaft, Hafermilch und Zimt in einen Messbecher geben und pürieren. Die Eismasse 40min-60min frieren. Nach der Hälfte der Zeit die Walnüsse und Karotten zugeben.

Für die Sauce: Hafermilch, Mandelmousse und Puderzucker vermengen. Über das Eis geben.
