We already know the creations "Island Heat", "Truffle Garden" and their colleagues from the small shop in the Himmelstraße, where the team of "Kailua Poké" launched a trend in the Hanseatic city one year ago in May.
Now, a year later, the colorful meals in the turquoise bowls will be served over the water in a steel-glass container on the Alster steamer feeder "Mühlenkamp".

Wir kennen die Kreationen „Island Heat“, “Truffle Garden” und ihre Kollegen bereits aus dem kleinen Laden in der Himmelstraße, wo das Team von “Kailua Poké” im Mai vor einem Jahr einen Trend in der Hansestadt lostrat.
Jetzt, ein Jahr später, werden die bunten Bowls in den türkisen Schalen auch über dem Wasser im Stahl-Glas Container am Alsterdampfer-Anleger „Mühlenkamp“ serviert.

Let's have a look from close up, shall we? We? - In today’s case it is Patrick and my daughter Clara as testers, and Sebastian and I as a photo team. I have an appointment with Christian Kille (or just "Kille") to have a chat about this newest trend food.
As usual in life, we talk about everything else instead. About togetherness, harmony, dreams that have been realized (or not) and values.
I find out, the boys are motivated to do much more than just create a restaurant, whose concept won the Leaders Club Award in 2017. This and the serious illness of Kille’s mother brought him back from paradise Hawaii to complete his business studies in Hamburg. With him in his luggage: pokè bowls and an idea.

Das schauen wir uns doch mal aus der Nähe an. Wir? – Das sind in diesem Fall Patrick und meine Tochter Clara als Tester, sowie Sebastian und ich als Fototeam. Ich bin mit Christian Kille (oder just “Kille”) verabredet, um mal gepflegt über das Trendfood zu schnacken.
Stattdessen reden wir über alles andere. Über das Miteinander, Harmonie, Träume, die verwirklicht wurden (oder auch nicht) und Wertevermittlung.
Ich erfahre, dass die Jungs viel mehr motiviert als nur der Aufbau eines Restaurants, mit dessen Konzept er und sein Schulfreund Patrick den LeadersClubAward 2017 gewannen, und von der schweren Erkrankung der Mutter, die „Kille“ aus dem paradiesischen Hawaii zurück holte, um sein Business-Studium in Hamburg abzuschließen. Mit im Gepäck: Poke Bowls und eine Idee.

Pokes (Hawaiian: "cut into pieces") are now very much in vogue in big cities like Berlin, Munich and Hamburg. Simply put these are salads with raw fish. Well, kind of. Cause there is so much more to them.
The bowls at Kailua Poke have their origins in Hawaii, but with fresh ideas and a little experimentation, the guys transform them into "Fusion Pokes", the "Aloha Spirit" always in mind.
We love the combinations of fish, vegetables, fruits and rice, harmoniously combined with crispy flavored marinades. Each bowl is a new discovery tour through various flavors that forces you to eat slowly, so you will miss nothing.

Pokes (hawaiisch: „in Stücke schneiden“) liegen mittlerweile in Großstädten wie Berlin, München und Hamburg voll im Trend. Flappsig gesagt sind es Salate mit rohem Fisch. Eigentlich. Denn dahinter steckt noch mehr.
Die Bowls im Kailua Poke haben zwar ihren Ursprung auf Hawaii, mit frischen Ideen und ein wenig Experimentierfreude machen die Jungs aus ihnen “Fusion Pokes”, den “Aloha Spirit” immer im Hinterkopf.
Wir lieben die Kombinationen aus Fisch, Gemüse, Obst und Reis, harmonisch verbunden mit knackig abgeschmeckten Marinaden. Jede Bowl ist eine neue Entdeckungstour durch diverse Aromen, die einen zwingt langsam zu essen, damit man nix verpasst.

Kille talks about the history of "Kailua Poke":
"It’s the legacy of my mother" - he doesn’t mean the poke itself, of course, but rather the strength that drives him to pursue his dream. Even after many unsuccessful attempts, Kille stubbornly keeps to his mother’s promise and remains true to himself: no business with elbows! Instead, buiilding a business as a team. Together.
Developing a system gastronomy, in which one respects the employees, pays them reasonably, and offers them a perspective. Where the food is healthy, tasty and comparatively cheap. Seems a little idealistic? It is. - But it works! At least here. And this makes these lovingly arranged bowls very, very special.

Wie bereits angedeutet, erfahren wir bei unserem Besuch auch über die Geschichte von “Kailua- Poke”:
„Es ist das Erbe meine Mutter“ – Damit gemeint ist nicht das Poke selbst, sondern vielmehr die Kraft, die Ihn antreibt, seinen Traum zu verfolgen. Auch nach vergeblichen Versuchen hält “Kille” hartnäckig am Versprechen seiner Mutter gegenüber fest und bleibt sich selbst treu: Kein Business mit Ellenbogen! Sondern im Team ein Geschäft aufbauen. Gemeinsam.
Eine Systemgastronomie entwickeln, in der man auf den Umgang mit dem Angestellten achtet, vernünftig bezahlt, mit Perspektive. Wo das Essen gesund, lecker und vergleichsweise günstig ist. Scheint ein wenig idealistisch? Ist es auch. – Aber es funktioniert! Zumindest hier. Und das macht diese liebevoll arrangierten Bowls zu etwas ganz Besonderem.

"A message of kindness and togetherness!" Well, that's some plan! Others would be happy to simply get their tables full.
Pressure, hectic, rough tone? - None of these things can be found in this small haven of humanity. In the background, we hear cheesy music from the Pacific, while the crew masters everything calmly, be it rush hour or questions. Even when both come at the same time.

“Eine Botschaft des Miteinanders!” Na, das ist mal ein Plan. Andere wären bereits froh, wenn sie nur die Tische voll bekämen.
Tempo, Hektik, rauer Ton? – Nichts davon findet sich in diesem kleinen Hort der Menschlichkeit. Im Hintergrund hören wir zum Teil kitschige Musik vom Pazifik, und die Mitarbeiter machen weder Andrang noch Fragen nervös. Selbst wenn beides gleichzeitig kommt. Wenn dann noch Gäste ins Gespräch kommen, die sich auf der Straße oder sonst im Restaurant ignorieren würden, ist das nicht weniger als ein weiteres Highlight.

When we leave the restaurant after three hours of taking pictures, chatting and having a wonderful lunch, we do it with a smile on our faces. I feel so blessed and inspired that even the annoying fly on my steering wheel doesn’t ever bother me.

Als wir nach drei Stunden Bilder-Sammeln, Zuhören und einem wunderbaren Mittagessen mit einem Lächeln das Restaurant verlassen, bin ich so beseelt, dass ich die Fliege am Lenkrad meines Wagens am Leben lasse.
