SMOOTHIE BOWLS – SPICY BEETROOT
Monday morning. Agony! Only a really good idea helps me start the day. A smoothie bowl is the answer! Spicy Beetroot is my choice, and before I know it, bananas, beetroot, spinach, berries and ginger are spinning around in my blender. And the thought of the toppings make my mouth water.
Spicy Beetroot:
300ml oatmeal drink (e.g. Kölln Smelk)
100g beetroot
1 banana
a hand full of baby spinach
300g frozen mixed berries
1 tsp ginger
2 tbsp vinegar (e.g. apple cider vinegar)
1 pinch of salt
Toppings:
2-3 tbsp oatmeal & fruit mix (e.g. Köllnflocken)
3 tbsp pomegranate seeds
15g roasted coconut
Directions:
Start with rinsing the beetroot. Fill water into a pot and add a splash of vinegar and the salt, and bring to a boil. Add the beetroot and boil until soft. Allow to cool and then peel. Finely grate the ginger. Then put the oatmeal drink, banana, beetroot, spinach, berries and ginger in a blender and process until smooth. Add salt and vinegar to taste. Pour into a bowl and decorate with the toppings.
